CHANTILLY, VA — The Sheet Metal and Air Conditioning Contractors’ National Association (SMACNA) has published “Kitchen Ventilation Systems and Food Service Equipment Fabrication and Installation Guidelines.” This first edition, according to SMACNA, will assist architects, contractors, engineers, and designers, as well as owners and facility managers, in understanding the complexities of designing, installing, constructing, and balancing both the exhaust and the makeup air systems required in commercial kitchen ventilation.

The new kitchen manual is a basic reference guide to industry-accepted practices for fabrication and installation of commercial kitchen ventilation systems and custom-built food preparation equipment. Also, the principles and components of kitchen ventilation systems are explained so that owners and facility managers can understand the interdependence of each piece of the system.
